Lime Juice
Function
Lime juice is the term given to the liquid that is produced naturally within the pulpy fruit of a lime. Many lime juice products sold on the market are actually lime juice concentrates which have additives for preservation as well as flavor enhancement. True lime juice has no additives. Lime juice is often used to flavor dishes such as Thai dishes, Mexican food dishes, and other citrus foods such as guacamole or salsa. Lime juice is also used in beverages such as limeades, lemonades, and some cocktails. Lime juice is mostly used for its flavor components, but it is sometimes utilized because of its health properties.

Lime juice has a very strong flavor and aroma; as such, it is often used for non-food related products and processes. Some consumers use lime juice in cleaning products such as dish detergent and natural bacteria eliminating cleaning products. Lime juice is also used for its medicinal properties. The Vitamin C concentration in lime juice makes it an excellent food additive for improving the immune system and preventing diseases such as scurvy. Origins
Real lime juice is produced by squeezing the inner fruit of a lime. Lime pulp is filled with naturally produced juice that is high in citric acid and therefore high in delicious flavor. If lime juice is paired with lime oil, other flavorings, or artificial preservatives, it is usually labeled as lime juice concentrate. Some lime juice may be pulp free while other lime juices include the flavorful pulp from the lime.
