Only recently, are foods now being fortified with copper gluconate, however, copper deficiencies and toxic effects from excess supplementation are rare.

Origins

Copper gluconate is prepared by the reaction of calcium gluconate and copper sulfate, or by the reaction of gluconic acid and copper carbonate or copper hydroxide. The copper gluconate can be crystallized using ethanol and heat.
