Natural lemon flavor is a very acidic citric flavoring; this food additive can create, enhance and intensify the zesty flavor of lemon in food and beverages, especially in juices, liquors and other beverages. Foods like sweets and fruity baked goods can contain natural lemon flavoring. Some seasonings may also contain natural lemon flavor. It is a flavoring agent that produces the citric acid aromatic flavor characteristic of lemon in beverages and foods that have lost their flavor due to processing and it also adds the flavor to foods in which this very acid and zesty flavor is desired.

Natural lemon flavor can be made from the extraction of the fruits essential oils (when extracted from real lemons it’s also called “lemon essence”), it can also be made from the castoreum, a yellow substance produced by the beaver's castor sac. Natural lemon flavor can be also made by mixing chemicals that come from a natural source in order chemically produce the flavor.
