Origins

Cocoa powder processed with alkali is also referred to as Dutch chocolate, named after the Dutch inventor, C.J. Van Houten.
In the Dutch process, the nibs or the chocolate liquor are treated with an alkalizing agent, such as, potassium carbonate. The nibs are ground and pressed to produce a product called chocolate liquor. The chocolate liquor is pressed to remove the cocoa butter, leaving the neutralized cocoa solids. The cocoa solids are sold as a pressed cake or ground powder.
